STUART — When I was a little girl in Spain, my grandmother would have me search her garden for snails to cook in her paellas. More recently, as an adult, my father showed me the family technique of adding rice to the pan in the shape of a cross to ensure the paella is blessed and cooks properly. When it comes to Spanish cuisine, and in particular this traditional Valencian dish, I am definitely biased. And I've been waiting on the edge of my seat for the opening of Tapas Latin Fusion in Stuart
